Japanese Chef – New Premium Japanese Restaurant (Hobart)

Location: Hobart, TAS

We are launching an exciting new Japanese restaurant in Hobart, designed around refined technique, premium ingredients, and a contemporary dining experience. This venue is part of an established hospitality group with a strong reputation for quality, consistency, and growth.

We are now seeking an experienced Japanese Chef to be a key part of this opening team.

About the Role

As our Japanese Chef, you will:

  • Prepare and execute authentic Japanese dishes with precision and consistency

  • Work across core Japanese techniques such as sushi, sashimi, yakitori, ramen, robata, and hot kitchen items (depending on your strengths)

  • Maintain high standards of food presentation, flavour, and hygiene

  • Contribute to menu development and seasonal specials

  • Work closely with senior management to establish kitchen systems and standards

  • Ensure compliance with food safety, HACCP, and workplace procedures

What We’re Looking For

  • Proven experience as a Japanese Chef (restaurant or fine-dining background preferred)

  • Strong understanding of traditional Japanese techniques and ingredients

  • Passion for quality, discipline, and attention to detail

  • Ability to work efficiently in a fast-paced, high-standard kitchen

  • Strong teamwork and communication skills

  • Reliability, professionalism, and pride in your craft

Experience in premium or omakase-style dining will be highly regarded.
