About the Opportunity The multi-award-winning Gambaro Hospitality Group is expanding! We are thrilled to announce the launch of a brand-new venue in the iconic heart of Coolangatta.
We are seeking a visionary and passionate Food & Beverage Manager to join us during the pre-opening phase. This is a rare opportunity to be part of the foundation team, helping to shape the operations and culture of what is destined to be the Gold Coast’s next landmark destination.
The Role As F&B Manager, you will hold shared accountability for the strategic direction and operational excellence of our outlets. You will drive high-level results across P&L, revenue growth, and guest experience.
Key Responsibilities:

Pre-Opening & Launch: Actively participate in the setup and strategic planning of the new venues.

Financial Management: Full ownership of rostering, wage control, cost management, and overall profitability.

Leadership: Coach and mentor a high-performing management team, fostering a culture of excellence.

Operational Excellence: Maintain a "hands-on" presence during service to ensure the Gambaro standard is upheld.

Compliance: Ensure all health, safety, and liquor licensing (RMLV) requirements are strictly met.
Required Skills & Attributes:

Proven Experience: Senior or multi-outlet management experience within large-scale, premium hospitality environments.

Industry Expert: Deep knowledge of contemporary F&B trends and significant wine experience.

Business Acumen: Strong ability to analyze performance metrics relating to guests, staff, and financials.

Leadership: Exceptional communication and stakeholder management skills with the ability to lead under pressure.

Professionalism: High standard of grooming, personal presentation, and learning agility.

Technical: Proficient in Microsoft Office Suite and hospitality-specific software.

Compliance: A current RMLV for QLD is essential.
