Us The Rasoi Sorrento is seeking an experienced and enthusiastic Chef to lead kitchen operations in our busy and well-established restaurant. Located in the picturesque coastal town of Sorrento on the Mornington Peninsula, we are renowned for serving authentic Indian cuisine prepared using traditional cooking techniques and fresh, high-quality ingredients.
Operating seven days a week, The Rasoi Sorrento offers both dine-in and takeaway services, catering to a diverse mix of local residents and visitors. Our menu features a wide range of rich, flavorful Indian dishes, and we pride ourselves on consistency, quality, and warm customer service in a fast-paced yet friendly environment. This is an excellent opportunity for a qualified and passionate culinary professional with proven experience in Indian cuisine and strong kitchen leadership skills to join a committed team and play a key role in the continued success of a popular hospitality venue.
Key Responsibilities:
- Planning, developing, and preparing a wide range of authentic Indian dishes, including curries, tandoori items, breads, rice dishes, and vegetarian specialties, in accordance with traditional recipes and house standards.
- Organizing and coordinating kitchen operations to ensure smooth service during busy dine-in and takeaway periods.
- Preparing, seasoning, and cooking food using appropriate cooking methods such as tandoor cooking, grilling, frying, simmering, and baking.
- Designing and updating menus in consultation with management, considering seasonal availability of ingredients, customer preferences, and cost control.
- Monitoring food quality at all stages of preparation and service to ensure consistency, taste, presentation, and portion control.
- Supervising and training kitchen staff, including cooks and kitchen hands, to ensure correct food preparation techniques, efficiency, and adherence to recipes.
- Ensuring compliance with food safety, hygiene, and WHS regulations, including proper food handling, storage, and cleanliness of kitchen areas.
- Managing stock levels, ordering ingredients, checking deliveries, and minimising waste through effective inventory control.
- Estimating food and labour costs, monitoring kitchen expenditure, and maintaining profitability targets.
- Maintaining kitchen equipment, ensuring it is clean, safe, and in good working condition.
- Collaborating with front-of-house staff to ensure timely service and customer satisfaction.
- Handling special dietary requirements and customer requests while maintaining food quality and authenticity.
To be successful in this role, it is essential you have:
- Hold a Certificate IV in Commercial Cookery or an equivalent recognised qualification.
- Have at least two years of relevant experience working as a Chef in a busy, professional kitchen environment, preferably within established or quality dining venues.
- Demonstrate strong leadership and team supervision skills, with the ability to train, motivate, and manage kitchen staff effectively.
- Possess in-depth knowledge of Indian cuisine, including spices, ingredients, regional flavours, and traditional cooking methods.
- Ability to work efficiently in a fast-paced, high-pressure kitchen while maintaining consistency and quality.
- Show attention to detail, creativity, and a genuine passion for food preparation and presentation.
