Job Title: Executive Chef – Gambaro Hospitality Group (Coolangatta)

About the Opportunity Since 2024, the Gambaro Hospitality Group has established a premier presence in Coolangatta with our successful Restaurant and Café operations. As we continue to grow, we are thrilled to announce the next phase of our coastal expansion: a bespoke Deli & Pantry opening this March.

We are seeking a high-caliber Executive Chef to take the reins of our Coolangatta precinct. This role will oversee our established kitchens while leading the culinary launch of our new Deli/Pantry concept.

The Role Overseeing three distinct concepts (Restaurant, Café, and the new Deli), you will be responsible for maintaining our award-winning standards while driving innovation across the precinct. You will manage multiple kitchen brigades and ensure the seamless integration of our retail and dining offerings.

Key Responsibilities:

  • Multi-Venue Leadership: Oversee daily kitchen operations for the existing Restaurant and Café, plus the launch of the Deli/Pantry.

  • Launch Management: Lead the March opening of the Deli, focusing on artisanal retail products, premium charcuterie, and high-end "pantry" staples.

  • Menu Innovation: Maintain seasonal excellence in the Restaurant/Café while developing a unique identity for the Deli.

  • Financial Performance: Full accountability for food COGS, labor costs, and kitchen profitability across the precinct.

  • Mentorship: Cultivate a professional and motivated back-of-house team across all three venues.

Required Skills & Attributes:

  • Executive Experience: Proven success in a multi-outlet or group chef role within premium environments.

  • Culinary Diversity: Experience in both high-end restaurant service and the production of deli/retail food concepts.

  • Operational Expert: Strong background in systems, kitchen workflows, and managing large-scale food production.

  • Business Acumen: Highly proficient in kitchen financials, waste management, and labor modeling.

  • Commitment: A "hands-on" leader who thrives in a fast-paced, high-growth environment.

  • Compliance: Advanced Food Safety Supervisor certification.
