Our 500-capacity gastro-brewpub will combine a state-of-the-art kitchen and brewhouse with a hospitality-first approach, delivering modern Australian food designed to pair seamlessly with our house-brewed beers and relaxed coastal atmosphere.
Think flame-kissed local seafood and meats, woodfired pizzas, fresh seasonal produce and chef-driven features that showcase WA’s paddocks and coast — all executed at scale, with quality and consistency at the forefront.
This is a Founding Senior Sous Chef role, offering the opportunity to help build the kitchen operation, systems and culture from day one. Working closely with the Head Chef, you’ll play a critical leadership role in service delivery, team development and maintaining high standards across all facets of the business.

The Role
As Senior Sous Chef, you will support the Head Chef in leading a large, multi-faceted kitchen catering for:

High-volume à la carte service

Woodfired pizza production
-
Functions and events
-
Pre-booked group dining

Takeaway and outdoor service areas
You’ll be hands-on during service, trusted to run shifts, lead teams and step into full kitchen control when required.
What We’re Looking For
-
Previous experience as a Sous Chef or Senior Sous Chef in a high-quality, high-volume venue
-
Strong leadership and communication skills with the ability to run calm, efficient services
-
Passion for modern Australian, produce-led cuisine
-
Experience with flame-based cooking techniques and whole-protein utilisation
-
Ability to produce theatre-driven dishes and guest-facing food experiences
-
Skilled in high-volume pizza production
-
Sound knowledge of food safety, compliance and kitchen systems
-
Experience supporting functions and events across multiple service styles
-
A genuine passion for mentoring, training and developing kitchen teams
Operational & Cost Control Experience
-
Assisting with stock control, ordering and supplier management
-
Understanding of food costing, GP targets and COGS management
-
Experience following recipe specifications and portion control
-
Comfortable conducting stocktakes and minimising wastage
-
Familiarity with inventory and POS systems (e.g. Cooking the Books, OrderMate, Tevalis or similar)
Key Responsibilities

Support the Head Chef in leading and mentoring the kitchen team

Run day-to-day service and oversee sections with confidence
-
Assist in menu development, seasonal changes and specials
-
Maintain food quality, consistency and presentation standards

Ensure compliance with food safety, hygiene and WHS requirements

Help manage prep schedules, stock rotation and ordering
-
Step into Head Chef duties in their absence

Salary Range
$80,000 – $90,000, dependent on experience and qualifications
