FULL TIME 38 HOURS PER WEEK SALARY PLUS SUPER $80k PA - $90K PA Sin Town Pty Ltd Trading as Margarita Daze is looking for experienced CHEF for our venue at UMINA BEACH on the NSW Central Coast. Margarita Daze is Umina's best beachside hangout, our absolute beachside position is reflected in our carefully crafted food and beverage menu. Our menu features fresh seafood, classic favorites, and fresh healthy meals.

We have complemented this menu with a fun and fresh cocktail menu and a wine list with paired menu suggestions that has lots of by-the-glass options. To be considered for the role you need to have a relevant industry qualification and at least 3 years' experience in a similar position. Duties and Responsibilities:

  • Lead and manage the kitchen team to ensure smooth, efficient service across lunch/dinner trade and events.
  • Plan, develop, test and refine seasonal menus, specials and group packages aligned with the venue’s brand and customer expectations.
  • Ensure menu items are deliverable at service speed and within operational capacity.
  • Maintain recipe specifications, portion standards and plating guides to ensure consistency and quality.
  • Manage food and labour costings, maintain recipe costing systems and achieve agreed profit/margin targets.
  • Control food costs by managing portioning, yields, wastage, spoilage and stock rotation.
  • Prepare rosters aligned to trade requirements, managing labour spend while maintaining service standards.
  • Oversee ordering, stock control, deliveries and supplier relationships, including stocktakes and variance control.
  • Monitor quality at all stages with regular taste, line and temperature checks; rectify issues immediately.
  • Recruit, onboard, train and mentor kitchen staff, supporting performance and ongoing development.
  • Ensure compliance with food safety, hygiene and WHS requirements, including allergen management, documentation and cleaning systems.

Skills and Qualification:

  • Proven experience in a similar leadership culinary role.
  • Extensive knowledge of kitchen operations, including food preparation, inventory management, and staff supervision.
  • Exceptional culinary creativity with a passion for innovation.
  • Strong leadership, organizational, and problem-solving skills.
  • Ability to thrive in a fast-paced and high-pressure environment.
  • Excellent communication skills and the ability to work collaboratively with other departments.
  • Culinary degree or equivalent experience preferred.
  • Experience with cost control, budgeting, WHS and food safety standards
