About The Role
In this role, you will be responsible for:
Leading and supervising employees across The Bistro, Patisserie, New Beijing, and Emporium Snack Bar, including kitchen and front-of-house staffHands-on cooking and day-to-day operation of our popular and successful BistroReporting directly to the New Lambton Catering Manager through regular daily and weekly meetings to discuss operations, issues, and new ideasPreparing and managing staff rosters, ensuring appropriate allocation of resources to meet business needsCompleting reports including file notes, injury reports, discrepancies, manager notes, appraisals, performance improvement plans, and other reports as requiredManaging employee performance, including conducting performance reviews and addressing underperformance across kitchen and food court teamsMaintaining and promoting high standards of hygiene and cleanliness across all kitchens, and supporting team leaders with preparation and cleaning schedulesMonitoring food costs and managing weekly expenditureOrdering stock in line with operational requirementsDriving innovation through the development of new ideas and concepts to enhance the catering profile of The Wests Group AustraliaLeading by example by working efficiently and setting a positive, productive standard for all staff
About You
To be successful in this role, you will bring:
A minimum of two years' experience in a Head Chef role within a large club environmentStrong leadership capability with a proven track record of training, motivating, and developing kitchen teamsCreative flair, with excellent presentation, communication, and interpersonal skillsDemonstrated experience in menu planning, costing, and controlling wastageExperience preparing rosters for large teamsProven ability to manage performance and conduct performance discussionsExperience completing stocktakes and managing ordering processesA collaborative leadership style that fosters cooperation and respect between team membersA friendly, enthusiastic, and positive can-do attitudeA strong commitment to maintaining and exceeding operational standardsA results-driven mindset with a focus on achieving outstanding sales outcomesThe ability to perform effectively in a fast-paced, high-pressure environmentCertificate IV in Commercial Cookery or relevant industry qualifications
