The candidate must have an excellent presentation, the highest standards of delivery in a hatted restaurant environment (or Michelin star), a strong attention to detail with exceptional organizational skills, strong team player, excellent people and time management skills and the ability to work with international staff, excellence in delivering quality customer service and customer satisfaction ratings including brand standards. - To ensure that the kitchen is organised and run to the required standards.
- planning menus, estimating food and labour costs, and ordering food supplies
- monitoring quality of dishes at all stages of preparation and presentation
- discussing food preparation issues with Managers, Dietitians and kitchen and waiting staff
- demonstrating techniques and advising on cooking procedures
- preparing and cooking food
- explaining and enforcing hygiene regulations
- select and train staff
- freeze and preserve foods
